Start the evening at Simon -- with views of the Palms Place pool, The Strip and surrounding mountains -- and receive:

Two chef's choice amuse bouche plates to begin

Two appetizers, choice of:
• Spicy tuna roll
• Miso soup
• Wok-charred edamame with ginger salt
• Caesar salad with ciabatta croutons

Two entrees, choice of:
• Grilled skirt steak with shoshito peppers
• Chicken curry with pineapple chutney
• Pan-roasted sea bass with fennel and hot and sour peppers
