At the heart of Chalon sur Saone in the Burgundy region of France, Hotel Saint Georges offers modern accommodation surrounded by historic sights and pretty pedestrianised streets.
Chalon is ideal for exploring the wider region, but be sure to explore the town itself first. Visit the neo-Gothic St Vincent cathedral, the old fortifications and the medieval houses dotted around the town, then stop at main square’s cafés and bars -- they offer perfect opportunities for people-watching. If you’re heading out, Burgundy is full of castles, culture and, of course, vineyards and wine cellars. The hotel is 30-minutes’ drive from Beaune, known as the wine capital of Burgundy.
Make sure you’re back for the evening, though. The restaurant menu, designed by chef Georges Blanc (whose restaurant in Vonnas, an hour away, has three Michelin stars), focuses on regional cuisine using fresh local produce. Dinner is complimented with an array of fine locally sourced wines from an extensive wine cellar. The hotel also has a Nuxe spa, offering a range of pampering spa treatments (charges apply) as well as a sauna and a Finnish steam bath.
The 19th-century building offers four categories of rooms, all recently renovated with flatscreen TVs, free WiFi and contemporary décor. The hotel also plays host to a changing program of exhibitions featuring the work of local artists.
