Set on the banks of the South Esk River, 30 minutes' drive from Edinburgh, Dalhousie Castle is Scotland's oldest inhabited castle.
The Daily Telegraph describes this hotel as the "real McCoy" -- dating from the 13th century, the castle comes complete with musket shot still embedded in the stone battlements and interiors that have been "transformed". The vaulted faux-Gothic ceiling and mini Imperial staircase create a "grand first impression", and there is a secret staircase to the oak-panelled Library Bar. Here, you can relax with a book in front of the fire.
The 2-AA-Rosette Dungeon Restaurant serves traditional Scottish and classical French dishes among suits of armour, while the more casual Orangery restaurant has panoramic views of the estate.
You can try falconry or archery within the hotel's 11 acres of parkland, and then relax in the spa, which is housed in converted storage vaults beneath the castle. Facilities include a Turkish steam bath, a sauna and a hydro pool.
Rooms are individually decorated with period furniture, tartan and tweed, and Wi-Fi is free.
