Whether you want old castles, the remains of the Maginot Line or amazing scenery, Auberge du Cheval Blanc is an excellent base for exploring Northern Alsace. This former coaching inn oozes rustic-chic charm and has the added advantage of a 2 Michelin-starred restaurant.
Centuries of occupation by the French, then the Germans, then the French (and so on) have given the area a wealth of Germanic place names and impressive ruins, while the Northern Vosges Regional Nature Park, a UNESCO-listed reserve, is perfect for walkers. The hot springs of Niederbronn-les-Bains, just 22 minutes’ drive from the hotel.
There are two restaurants on site, both focusing on Alsatian cuisine. The more casual Winstub (literally ‘wine room’) offers traditional dining in rustic surroundings, while the Rösselstub is an upscale destination, with a choice of gourmet à la carte, set or tasting menus as well as those Michelin stars. Foodies can take a cookery class with the chef, or opt for the culinary package -- dinner, bed, breakfast and a class. The spa offers a heated indoor pool, Jacuzzi, steam room and two different kinds of sauna as well as a range of treatments (charges apply).
The 21 rooms and suites, divided between the main building and The Winstub building, are individually and cosily decorated. Cheval Blanc suites come with minibars, internet access and satellite TV, while cosier suites over at The Winstub have terraces or living rooms. Some suites have spa amenities, such as a Jacuzzi, hammam or sauna.
