This three-course chef's menu, created by Chef Marcos Segovia, changes seasonally and currently includes:

• Any two starters, like jumbo lump crab cake with lemongrass lobster sauce and tomato jam or Dominion Farms crisp pork belly with caramelized apple, toasted pecans and vanilla butternut squash puree

• Any two entrees, such as Black Angus beef tenderloin in oxtail and scallion ragout with Bordeaux wine sauce or Icelandic arctic char with baby fennel, orange and bay scallops in spicy shrimp broth

• Any two desserts, like the chocolate caramel mousse dome with almond nougat, caramelized banana and warm rum jus or one of the signature French Room souffles
