Start the evening at Simon, which offers views of the Palms Place pool and the Red Rock Mountains, and choose from the following options:
Two chef’s choice amuse bouche
Two appetizers, choice of:
• Calamari with ponzu and shishito peppers
• Italian sausage pizza with fresh mozzarella and roasted fennel
• Margherita pizza with vine-ripened tomatoes and fresh basil
• Caesar salad with ciabatta crouton and parmesan crisp
