-Sautéed white asparagus, poached quail egg, white truffle oil and parmesan dust
-Citrus cured salmon gravalax shaved fennel, segmented orange and finger lime salad
-Twice cooked pork belly with cranberry and cashew nut salad and orange reduction
-Five spice duck ravioli, braised red cabbage and game jus

- Crispy skinned Atlantic salmon, prawn and rocket mash, bell pepper emulsion and chive oil
